1. Mix together very well the Sugar, flour and cinnamon.
  2. Add the Apples and toss them to coat in the flour mixture.
  3. Preheat your oven to 425 F. Spread fruit mixture evenly in the pastry shell.
  4. Position top crust and crimp the edges of the pie, trimming off excess dough and cutting a few slashes in the top with a sharp knife.
  5. Bake in the centre of the oven for 20 minutes, then reduce the heat to 350 and continue baking for 10–15 minutes, until golden brown.
  6. Serve with big scoops of vanilla non-dairy ice cream.
