  1. Preheat oven to 350°F.
  2. Spray a 9x13 inch pan with cooking spray.
  3. Crust: blend flour and sugar together, then cut in the butter with a fork or pastry blender.
  4. Press crust into a 9x13 inch baking pan that has been sprayed with a cooking spray.
  5. Bake for 10–12 minutes or until lightly browned.
  6. Prepare filling while crust is baking.

Filling Edit

  1. In a large mixing bowl blend sugar and flour, then add eggs, vanilla and rhubarb and blend well.
  2. Pour mixture over partially baked crust and continue baking for 30–35 minutes.
  3. Serve warm or cooled.
  4. Store leftovers in the refrigerator.
