  1. Heat oven to 350°F.
  2. Peel the manioc root and grate it on the medium grate.
  3. You should have 2 cups.
  4. Place in a large bowl and pour in the coconut milk beating with a whisk.
  5. Add the eggs, one at a time, sugar, butter, and the manioc flour, mixing well.
  6. butter and flour a 2-quart mold.
  7. Pour batter into mold and bake for 40 – 45 minutes or until a wooden skewer comes out clean.
  8. Cool on wire rack for 10 minutes before unmolding.
  9. For a beautiful presentation, drizzle with warm apricot preserves and top with sliced almonds.
