1. Soften gelatin in cold water.
  2. Beat egg yolks, add ½ cup sugar, lime juice, and salt.
  3. Cook over hot water stirring constantly, until thickened.
  4. Add lime peel and gelatin.
  5. Stir until gelatin is dissolved and add food coloring to tint a soft pale green.
  6. Cool.
  7. Beat egg whites until stiff, adding remaining sugar slowly.
  8. Fold into lime mixture.
  9. Pour into pie shell, chill until firm.
  10. Garnish with whipped cream or meringue.
